(WTNH, May 31, 2005 5:45 PM) Our busy lifestyles keep many of us
from eating healthy. Now there's a way to feed your family tasty
and nutritious meals that you can whip up in just ten minutes. Chicken
breasts, whole wheat pita bread, frozen vegetables are ingredients
you'll need for a quick, tasty and healthy meal. It's fast track
nutrition created by Connecticut's own Pam Oliver.
"It doesn't always have to be such
a big fancy gourmet meal for our supper, so to speak. It can be
quick, healthy and affordable." Pam says it's all about leaner
protein and anti-oxidants, meaning lots of fruits and vegetables.
Equally as important, whipping it up fast. Pam recommends Chicken
stir fry pita. Start with coating the pan with canola oil. "Now
we're gonna take some chicken.." Saute the chicken breasts
with sea salt and pepper.
"If you don't have the time to get the fresh
chicken or thaw it on time you can use pre-packaged cooked chicken
they've come out with." Use frozen green and red peppers. "Take
it right out.. quick and easy.." Add the onions. Meantime garnish
with strawberries, papaya and kiwi. "Children do love fruit,
when it is really prepared, cleaned for them, cored for them."
Slice the pita bread three quarters in, fill it up and top off with
baby spinach and tomatoes. It's a balanced dinner of five to six
hundred calories.
Another healthy choice, a tasty tostada with lean ground beef at
least 90 percent lean. "If it's lean it does contain an awful
lot of iron and vitamins and good nutrition." Sea salt and
pepper for taste. Then spoon browned beef onto a corn tortilla.
Layer with salsa, fat free sour cream. "I like the fat free
sour cream because I think for a fat free product it still maintains
a good taste and quality." There's also onions, and light Mexican
cheese. But don't forget the fruit. I's a colorful plate of good
health and well under a thousand calories.
"Think a little bit lighter, a little bit
leaner, a little bit healthier."
